Rainy Day Banana Bread

Hi Everyone, I hope you are having a fine Saturday. It is rainy here in South Florida and we need it, so it is a good day to stay inside and bake something. I made a loaf of banana bread.
It is really yummy with a nice crust, and toasted it tastes wonderful with a little butter, of course. Here is the recipe:
Cream together 1/2 cup shortening, 1 cup sugar, 1 tsp. vanilla and 1 beaten egg.
Add 3 cups ripe, mashed banana
Now add 2 cups flour 1 tsp. soda, 1/4 tsp. salt and 1/2 cup nuts (optional).
Bake in a greased and floured loaf pan at 350 degrees for 1 hour.
It slices well and is very moist with crispy crust.

  2. Looks great Egretta, I was just thinking of Banana bread this very morning...I thought we were going to have rain the sky was cloudy but the sun came out later...Hoping all is well and your day was good...with love Janice

  4. One of my favourite comfort foods - banana bread. It definitely cheers me up on grey, overcast and threatening-to-rain-at-any-moment types of days like today has been. That, with a gorgeous cup of tea is the perfect remedy for those rainy day blues we all get from time to time. Love that plate you've served the slice on, too. - June
