" Cherry Cheesecakes"



Yum! My nice neighbor, Margaret, brought over these lovely and delicious little cheese cakes the other evening. And the best part is that they are a Weight Watchers recipe and they taste like the most decadent sweet in the world! And they do not contain artificial sugars, which I do not eat. I try to limit sugar and I definitely do not want to eat the man-made stuff that causes all sorts of problems in your body!


Anyway, these were very nice, so she gave me the recipe and here it is!


Cherry Cheesecakes


Ingredients:

3/4 cup graham cracker crumbs

2 Tbsp. light butter melted

2/3 cup low fat cream cheese

6 Tbsp fat free cream cheese

3 Tbsp fresh lemon juice

2 large egg whites

1 1/2 tsp. vanilla extract

1/2 cup sugar

3/4 cup light fruit pie filling, cherry


Place 12 cupcake liners in a cupcake pan. Preheat oven to 375 degrees.F

In a small bowl, combine cracker crumbs and butter, mixwell. Spoon 1 Tbsp. of crumb

mixture on bottom of each liner and press down gently; refrigerate until ready to use.


In a medium bowl, using an electric mixer, beat both types of cream cheese until fluffy. Add lemon juice, egg whites, vanilla and sugar and beat til smooth.


Spoon cream cheese mixture evenly into muffin liners; bake until set, about 15 minutes. Remove from oven and allow to cool.


Top each cheesecake with 1 Tbsp. cherry pie filling. 12 servings. One counts as Value 3 in Weight Watchers. I don't know how many calories, but one couldn't be that many. And they are soooooo good!

  2. Egretta, I wouldn't worry: calories in foods prepared for you by other people count towards THEIR calorie intake, not yours! :-)
